Relaxing weekend

Wow, what a beautiful weekend we had here in southern MN! It was great to get outside and enjoy the fresh air without wanting to run back inside within two minutes. Although I really can't complain about this winter at all. Too bad my little man was sick this weekend so he wasn't able to be out all day long, I did make him go out for a bit here and there as nothing heals like fresh air. It was a relaxing weekend filled with whatever we wanted to do. Jim started his seeds for the garden.
He was in his glory with this project. I just can't wait to see them in the garden and to know that I will be able to eat the fresh produce from my backyard. My favorite are the green beans, I'm drooling right now thinking of them!

Well while Jim was busy doing his thing I decided to make a fiber filled brownie, it wasn't GF/SF but I needed something packed with fiber that tasted good. I have been taking way too many pain meds recently and if you know anything about pain meds they are horrible for every other part of your body except for the painful part, temporarily. So needless to say I have yet to have a normal bm for awhile now. I needed to make these low fat brownies asap! According to the weight watchers world they are only 1 point each, an absolutely delicious one point.
The recipe is:
3 cups all bran original cereal
2 1/2 cups water
1 1/2 tsp baking powder
1 egg
1 box low fat fudge brownie mix
1/2 bag of chocolate chips (these don't count towards the one point, but make these morsels amazing!)
Directions: Preheat oven to 350 degrees. Let the cereal soak in the water then mix the rest of the ingredients in. Put in muffin tins with the liners and bake for 25 minutes. I usually freeze half of them so I can just grab one out and pop it in the microwave for a quick snack. Now the challenge is to find something this full of fiber and make it GF/SF! Let me know if you have any good ideas.
Now it's on to taking care of my little man some more. Lunch time and then nap time, this mom could sure go for a nap! Then hopefully I will be loosened up for the day and feeling good so I can work on getting this house picked up a bit and make something good for dinner. This means I cannot get on pinterest otherwise it may suck me in for the afternoon, I may need a pinterest anonymous group pretty soon...
