Coming around? We'll see!

Most of the time I can determine how I will feel when I wake up in the morning. Just like the average person knows they will wake up feeling good unless they are ill, then it's a different story. This past week it's been a surprise every morning, it's kind of like those mystery dumb dumbs, some are great and others not so much. Some mornings are good and some are the typical stiffness that has been going on ever since I messed up the whole "not taking the right amount of meds deal." Like this morning I woke up feeling pretty good, the stiffness was gone in under two hours and I had a great energy level going, it was amazing!!! I love feeling good and having energy on Saturdays, it's such a great feeling. What I'm hoping for is that the good days will out weigh the bad days soon and I will be back on track to feeling better more often. I will be going on to my second month of taking my Same200 and L-methylfolate which Dr. J is thinking will help. Like most medications/supplements I'm sure it will take 2-3 months to notice a difference.

I haven't spoken towards my fertility issues much yet as I haven't been concentrating on "those problems" as much as getting my JRA under control. However my cycle will be a good gage on whether or not my body is healing and the supplements are working. A short history on my fertility issues is that it took us a year starting in September 2010 to get pregnant with our second child, as you notice I only have one in my informational section. We lost baby #2 in October 2011 early on in the pregnancy. Ever since this has happened I have yet to ovulate or have a "normal" cycle. So what I do for that (when I feel like it) is two months of birth control and one month off. The idea for this is to jump start ovulation, well that has yet to work. Ever since the miscarriage I have had a constant flair of the JRA. So what is affecting the other? Hormone imbalance causing JRA flair or JRA flair causing hormone imbalance???? Chicken or the egg? It's obvious that the whole body needs to be well before each part will be in balance. I'm excited to see how my next cycle off birth control will go to see if the supplements are working. I can tell you that nothing pisses a lady off more than having a whack cycle...right ladies?! Well it's not the shortest description but after 2.5 years of infertility issues it could have been a lot longer! I'm sure you will all get to experience my frustrations of this difficult journey in future posts, thankfully I have no frustrations with it today:)

Lately I have been craving a cleanse, yes I did just put that down and I think I actually mean it. As I now sit here contemplating it and remembering how much I REALLY missed my coffee. What I truly think my body is craving is the feeling of being cleansed and feeling better. Parts of me also thinks it would help boost up my motivation to eat a lot cleaner and hopefully it would help me get over sugar cravings. Speaking of cravings, I was craving something sweet (surprise) tonight and I also wanted to try out my new coconut palm sugar. I went to my pinterest board and found the coffee mug chocolate cake recipe. This was my second time cooking with the palm sugar and it is AMAZING as a sugar replacement. No bitter taste like stevia or the other sugar replacements. Here is my GF/SF verson:
Chocolate Cake In A Mug:
2tbls Pamelas GF pancake baking mix
3tbls palm sugar
2tbls cocoa powder
2tbls all natural applesauce
2tbls almond milk
1 egg white
Mix the above in a coffee mug really well with a fork. Microwave two minutes and enjoy!! The regular recipe with gluten flour and regular sugar and unsweetened almond milk is 100 calories. I figure this to be about the same if not a little less with the palm sugar being less calories than regular sugar. For those of you interest in GF/SF cooking go to this website here. Lots of great information from what I have found so far.

Num! Spongy chocolate goodness!
My hubby couldn't even tell it was SF/GF.

I also have to share with you my sweet potato recipe from this evenings dinner. I honestly cannot get enough sweet potatoes lately!
2 - 3 medium sized sweet potatoes
2 - 4 tbls butter
garlic salt

Peel and slice into 1/8th of an inch thick (or whatever thickness you prefer) slices. Get a large piece of tinfoil and spray with non stick cooking spray or rub butter over it. Pile the sliced potatoes onto the tinfoil piece and put pats of butter over it and then sprinkle with however much garlic salt you like. I probably did 1tbls tonight and it was pretty mild. Wrap the spuds up really good so the tinfoil doesn't tear, I usually do one piece on the bottom spray another for the top and wrap it all in another piece. Throw it on the grill for 30 minutes (longer if you like them really crispy) and unwrap and enjoy!
Everything all ready to be wrapped
up and put on the grill
